This delicious sweet potato & chickpea curry is one of those meals, just throw the ingredients together in one pot and bake it. That’s it.

I love making curry, not only because it’s a quick weeknight meal but also because it’s flavorful and delicious. I used to have an aversion to spicy food, so I’d never eat curry. But once I tried it, I realized why my husband raves about it. It’s literally his favorite food. The flavor is so bold and intense. I made this sweet potato curry non-spicy, since I’m still building up my tolerance. But don’t worry, it’s still very well spiced with turmeric, cumin & ginger!

Sweet Potato & Chickpea Curry

Throw together this sweet potato & chickpea curry with less than 10 ingredients in one pot. A delicious, nourishing weeknight meal that's easy to make.

Ingredients

  • 1 can coconut milk 400 grams
  • 1 can chopped tomatoes 400 grams
  • 1 large sweet potato 250 grams, peeled and cubed
  • 1 can chickpeas 400 grams
  • 1 ½ tsp turmeric
  • 1 ½ tsp cumin
  • 1 ½ tsp ground ginger
  • 2 tsp salt and pepper to taste
  • 1 tbsp coconut sugar

Instructions

  • Preheat the oven to 180 degrees C, fan setting.
  • Place the coconut milk, tomatoes, turmeric, cumin, and ground ginger in a large saucepan or cast iron oven dish and simmer over low heat until they start to bubble.
  • Stir in the cubed sweet potato, chickpeas, salt, pepper & coconut sugar.
  • Put the lid on the pot and put in the oven for 45 minutes to an hour.
  • Top with coriander (optional) and serve.

Notes

Add a handful of coriander and squeeze lemon juice on top for garnish. I like serving this curry on top of steamed brown rice.
