Have you ever had pink dragon fruit, or “pitaya”, before? It’s an exotic fruit that’s spiky on the outside with black dots on the inside and it’s all the rage right now. Dragon fruit originated in Mexico, but you can find it all over the world normally at Asian supermarkets. They sell it at the street markets here in Hong Kong, so I always buy some, cut it up, and then freeze it to use in smoothies. Hence the inspiration for this easy, 3-ingredient pink dragon fruit smoothie!
Blueberry blackberry smoothie
You might normally see the dragon fruit that’s white inside, but I recommend looking for the one that’s pinkish/purple on the inside so you can get this pretty color! I’ve been making smoothies like this blueberry blackberry smoothie for breakfast regularly, because they’re ready in under 5 minutes, require only a couple of ingredients, and are really satisfying. Not to mention how naturally sweet and delicious smoothies are.
There are literally hundreds of possible smoothie combinations out there, especially when you start adding in superfoods, nut butters, and all the other mix-ins you can think of. I usually keep mine simple, not just because I’m sometimes lazy (even though that’s partially the reason) but because I find that if you add too much in they just don’t taste like anything in particular. I like being able to taste what flavor it is!
3-ingredient recipe
In this pink dragon fruit smoothie, you’ll find only 3 basic ingredients: frozen pink dragon fruit, frozen bananas, and coconut nectar. Feel free to leave out the coconut nectar if you want, since the fruit should make it sweet enough as is! I’ve just been adding a dash or two of coconut nectar into my smoothies lately because I really like the flavor. - 3-4 frozen bananas

- 1/3 cup frozen dragon fruit

- 1 tsp coconut nectar
- 1/2 cup water, as needed

- Add all ingredients to a high speed blender.

- Blend on high until creamy.
- Pour into a mason jar and enjoy!
