I love oatmeal raisin cookies. They were a favorite cookie of mine growing up. I was desperately craving them over the weekend, so I decided to bake a healthier version. After a couple of trial and errors, I ended up with a batch of delicious, chewy gluten-free oatmeal raisin cookies. Also, they happen to be gluten-free. Click through for the recipe!
I asked recently on Instagram what everyone’s favorite cookie flavors are. One of the answers I received most suprised me: oatmeal raisin! Now I love a good oatmeal raisin cookie. I just didn’t realize how popular they are. I was super excited to find that they can be made vegan and gluten-free, without sacrificing the classic flavor we all know and love.
I think the key to success is the perfect ratio of raisins to cookie.
Also, they’re very soft and chewy, which make them taste amazing. I loved them so much I couldn’t help but grab two and eat them straight away! I made this recipe easy, with less than 8 basic ingredients in less than 30 minutes. So you can whip up a batch and share them with your friends and family.
I adapted these vegan oatmeal raisin cookies from an older recipe of mine, changing the natural sweetener to maple syrup and reducing the number of ingredients. I think these taste more like the real deal, plus they’re easier to make so I’d recommend giving it a go.
This makes a batch of 14 cookies, so you can share them with family & friends.
Take them to a potluck or store them in the fridge for later. These simple, delicious gluten-free oatmeal raisin cookies are even husband approved! For more cookie recipes, be sure to check out my lazy girl chocolate chip cookies and the best vegan breakfast cookies.
