Raw Vegan Snickers Slice

raw vegan snickers slice #vegan #glutenfree #recipe

These raw vegan Snickers slices are healthier versions of the original candy bar. Filled with all-natural, plant-based ingredients, they pack the same delicious punch with three layers of pure decadence. You’ve got a coconut cashew base topped with peanut butter date caramel topped off with homemade peanut butter swirled raw chocolate. The reason for such an indulgent treat? I wanted to revamp my popular original raw snickers bars recipe, which was one of the first raw vegan dessert recipes that I posted on my blog over a year ago.

I adapted this recipe from one of my fellow healthy foodies and role models, Taline Gabrielian of Hippie Lane fame. Seriously, she’s a superstar mom and raw vegan dessert goddess, so if you haven’t checked her out yet I highly recommend taking a peek at her Instagram. I guarantee you’ll be drooling all over your screen. These Snickers slices are super chewy, gooey, sweet, and salty all at the same time. If you’ve never thought Snickers could be good for you, think again.

What do I love about Snickers bars?

Well, I could go on and on. There’s just something about the balance between the crunchy, nutty base and the sweet, gooey peanut butter caramel dotted with peanuts that gets me. The raw chocolate on top is just an added bonus that takes them over the edge. I’ll warn you ahead of time, these are incredibly sweet so I can only handle a little bit at a time. They’re as close to regular Snickers bars as you’ll get, minus all the additives and artificial ingredients.

These vegan snickers bars are easier to make than you may think.

I tried to simplify the recipe as much as possible, while still making them taste indulgent like real candy bars. The biscuit base and the caramel are whipped up quickly in a food processor, then you can easily make the raw chocolate in a saucepan over low heat. I swirled extra peanut butter through the chocolate to make them even more irresistible.

On top of them being raw and vegan, they’re gluten-free, soy-free, and refined sugar-free.

If you’re like me, you don’t need much convincing to indulge in a wholesome, triple-layered sweet like these raw vegan Snickers slices. Because they’re made with only wholesome ingredients, they’re so much better for you than the packaged kind. This also means they’re much more satisfying. My boyfriend can’t even finish one!

I crave them every now and then, so I usually keep them in my freezer for a reward or special weekend treat. If you try this recipe, please share with me on Instagram and let me know what you think! Ingredients

For the base

  • 1/2 cup gluten-free rolled oats
  • 1/2 cup cashews
  • 1/2 cup almonds
  • 1/2 cup shredded coconut
  • 1/4 cup brown rice syrup
  • 2 tbsp peanut butter
  • pinch of pink Himalayan sea salt

For the peanut butter caramel

  • 1 cup pitted Medjool dates soaked in hot water for 30 minutes
  • 1 tbsp peanut butter
  • 1/2 tbsp brown rice syrup
  • 1/2 tsp vanilla powder or extract
  • pinch of pink Himalayan sea salt
  • 1/2 cup shelled peanuts
  • For the chocolate
  • 1/4 cup coconut oil
  • 6 tbsp raw cacao powder
  • 2 tbsp maple syrup
  • 1 tbsp peanut butter

Instructions

For the base

  • In a food processor, process the oats, cashews, almonds, coconut, and salt until all ingredients are broken down into a flour-like consistency.
  • Add in brown rice syrup and peanut butter and process until a sticky ball of dough forms.
  • Press base down evenly in a loaf pan or slice tin lined with non-stick parchment paper.
  • Place in the freezer to set.

For the peanut butter caramel

  • Drain the dates.
  • Process dates, peanut butter, brown rice syrup, vanilla, and salt in a food processor until smooth.
  • Spread caramel over the base and sprinkle peanuts on top of the caramel.
  • Lightly press peanuts into the caramel and place back in the freezer.

For the chocolate

  • Heat coconut oil in a saucepan over low heat until completely melted.
  • Add in cacao powder and maple syrup and whisk together until fully mixed.
  • Pour chocolate evenly on top of the caramel.
  • Drizzle with peanut butter and swirl it through the chocolate with a spoon.
  • Place back in the freezer for at least 2 hours.
  • Remove from the freezer and let thaw for 30 minutes before cutting into slices.
  • Eat within 20-30 minutes after removing from the freezer!

Notes

I definitely recommend letting them thaw before trying to cut them into slices! They’re very hard immediately after being taken out of the freezer. They’ll stay good for 5-7 days if kept in the freezer.
